West Windsor,
N.J. - Ready to take your summer menus to the next level? Top regional
chefs will share their recipes for preparing savory seasonal dishes
at the Culinary Center at Mercer County Community College from June
through August. Chefs include Frank Campione, Wendy Jaeger, Carol
Maxwell, Lawrence Frazer, Shari Widmayer and Elizabeth Dinice. Classes
are held evenings and weekends on Mercer'sMCCC's West
Windsor campus at 1200 Old Trenton Road.
In the new class, "Summer Grill Party, Two Meals and Three
Wines," with Chef Wendy Jaeger on June 3, participants
will learn the art of grilling fish, poultry and light side dishes.
"Tea Party! Great Summer Entertaining," presented
by Chef Carol Maxwell on June 12, features hot and cold brewed beverages,
scones, tea sandwiches and light desserts. In "Whew-It's
Too Hot to Cook!" on July 12, Chef Elizabeth Dinice teaches
cold soups, ceviche, bruschettas, and no-cook desserts. More grilled
fare is on the menu with Chef Dinice's "Sensational Sausage"
on July 26. Chef Jaeger returns on August 27 with "The Perfect
Summer Pairing - Fruits, Cheese and Crisp Summer Wines,"
where participants will prepare crispy streusel, chilled fruit soup
and fresh fruit beignets, and match them with wines and cheeses.
Fresh,
local produce is the theme for three new classes. Chef Shari Widmayer
will offer recipes for old-fashioned sweets in "Farmers
Market Bakery" on June 18. Chef Maxwell's "Farmer's
Market Meal" on July 15 makes the most of garden vegetables
from tomatoes to zucchini to corn to basil. On August 5, Chef Maxwell
returns with "Farmers Market Dessert," featuring
fruit-based recipes such as peach pie, blueberry crumb cake, and
Italian stuffed peaches. The artistry of dessert is the focus when
Chef Widmayer returns with "Cake Masters Decorating,"
a two-session class August 6 and 13.
A
number of courses are back by popular demand. The cuisine of Italy
is on the menu when Chef Frazer presents "Playing with Pasta"
on June 20 and "Playing with Pasta II" on July
18. Chef
Dinice teaches "Knife Skills," a course to build
confidence and dexterity in the kitchen, on August 7 and again on
August 21. Wine
enthusiast and educator Bruce Smith returns to share his knowledge
with "Wines of Argentina" on June 30; "Summer
Bubbles" on July 7; "International Rosé"
on July 14; and "ABC - Anything But Chardonnay"
on July 21.
