Give cooking The Old College Try

The state-of-the-art kitchen in the culinary center at Mercer County Community College will be back in business Sept. 8 when home cooks return for noncredit classes.

MCCC staff as well as local chefs will offer hands-on and demonstration classes at the West Windsor campus ranging from basic cooking skills to baking gingerbread for the holidays.

Bill Conrad will teach Culinary 101, a five-session, "how-to" series on Saturdays: "Knife Skills" Sept. 8, "Soups On!" Sept. 29, "Meats" Oct. 6; "Poultry" Oct. 13; and "Fish" Oct. 20. Culinary 102, includes three classes, 2 to 5 p.m.: "Fruits and Vegetables" Sept. 29; " 'Get in the Game' Game Meats" Oct. 6; and "Come Out of Your Shell" Oct. 20.

Anne Lumberger reprises her No Fear series with "Bread Basics" Sept. 14; "Cakes from Scratch" Oct. 12; and "Pie Dough" Nov. 16. She will teach children's classes, "Cookies! A Kid's Workshop" Sept. 22 and "Gingerbread Workshop" Dec. 8.

Donna Squillaro will teach Italian and Spanish cooking with "Campagna" Sept. 12; "Tuscany" Oct. 3; "Rome-Lazio" Oct. 17; and "Paella and Sangria" Nov. 30. Chef Lawrence Frazer offers "From Sauce to Salsa" Nov. 3 "Sauces Beyond Salsa" Nov. 17. Benson Yu will teach "Sushi 101" Sept. 10; "Thailand" Sept. 24; "Asia, Far East Style" Oct. 15; "Latin America" Oct. 29; and "Northern Europe/German" Nov. 12.

In a new Food for Family and Friends series, Elizabeth Dinice will teach ways to enhance menus: "Food and Beer Pairing" Sept. 17; "Steakhouse Classics" Oct. 8; and "Fast Family Meals" Oct. 22.

Two classes will teach pairing food and wines. Conrad's "Pairing for Beginners" is Sept. 8, 2 to 5 p.m., and "Pairing and Purchasing for Your Cellar and for Gifts" Oct. 13, 2 to 5 p.m. Two chefs will offer techniques for cooking with less fat. Wendy Jaeger will teach participants how to prepare healthful meals French-style with "French Women Don't Get Fat and Neither Will We!" Sept. 19. In his Fat Busters Series, Douglas Fee will present "Saute Pan" Sept. 26; "Sensational Sauces" Oct. 10; and "Awesome Appetizers" Oct. 24. Wellness counselors Anastasia Slattery and Rosalie Phelan will talk about relationships with food in "Unspoken Truths about Food We Eat A Nutrition and Sampling Seminar" Oct. 10 and 17.

For entertaining, Jaeger will offer tips for elegant, stress-free parties in "Do Ahead Brunch Menus" Oct. 14 and "Elegant Cocktail Parties" Dec. 2. "Casuals Meals for Cool Weather" is Nov. 11.

Conrad will team up with wine educator Bruce Smith for "Thanksgiving and Other Holiday Entertaining" Nov. 14. "Dinner Party" will be taught by Fee Oct. 19. Treats for family and friends will be the focus of "Holiday Confections" by Dinice on Dec. 3.
